CRUST INGREDIENTS:

  • 2 Cups Meedjol Dates (Pitted & Soaked Overnight)

  • 1/2 Cup Walnuts

  • 1/2 Cup Cashews

  • 1/2 Tsp Coconut Oil 

  • 2 Tsp Coconut Flour or Quinoa Flour

  • Pinch of Vanilla Bean Powder

  • Pinch of Salt 

 

FILLING INGREDIENTS:

  • Organic Fresh Pumpkin Puree 

  • 1 Cup Meedjol Dates

  • 1 Tsp Coconut Oil 

  • 1/2 Cup Almond Milk 

  • Pinch of Cinnamon Powder & Nutmeg Powder

  • 1/2 Tsp Vanilla Bean Powder

  • 1/2 Ripe Avocado 

  • 1 Tsp Coconut Nectar 

 

DIRECTIONS:

  • Use food processor, and toss in crust ingredients until creates a ball of dough. Separately blend filling ingredients in food processor. 

  • Form crust and pour pumpkin filling. Let it freeze overnight until solid. Top with coconut flakes or walnuts!
