Here is my healthy spin on the Chinese Green Onion Pancake. This dish is equivalent to a breakfast omelette in Asia, this is what I grew up eating! But instead of the asian dough I am using organic corn tortillas. Super delicious!

INGREDIENTS:
1 organic corn soft tortilla 0R use gluten free eziekiel tortilla
1 Tablespoon of coconut oil
celtic sea salt and 1 tsp of tamari of gluten free soy sauce
1 bunch green onions
2 organic eggs

I'm all about moderation! And once in awhile I like to have a refreshing summer mojito! Today I share my YUMMY grapefruit mint mojito recipe using Zevia non-gmo soda with no added preservatives or artificial coloring ! no sugar added, this is super tasty and will guarantee no hang over.

INGREDIENTS:

  • 1 Cup of Fresh Grapefruit Juice
  • 2 Shots of Gin or Your Choice of Clear Alcohol
  • 2 Tablespoon of Diced Kiwi
  • Handful of Raspberries
  • Fresh Mint
  • Half of Lime or Lemon Juice
  • 3/4 Cup of Zevia Orange
  • 3/4 Cup of Zevia Grapefruit
  • Handful of Ice Cubes

Orange Cauliflower Poppers

My Orange Zevia Cauliflower Poppers Make for a Perfect Summer Time Appetizer! So Delicious, Easy, and Nutritious! Using Zevia Orange Soda which is Non-GMO Verified, With No Artificial Sweeteners or Coloring sweetened with Natural Stevia.  They are super crispy, and a delicious Party In Your Mouth!

INGREDIENTS:

  • 1 Whole Cauliflower ( Cut Into Florets)
  • 1 quart grapeseel oil, or as needed
  • 1 1/3 cups all-purpose flour (gluten free)
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon himalayan sea salt
  • 1/4 teaspoon garlic powder, thyme, rosemary
  • pinch of chilli peppers (optional)
  • 3/4 Cup of Zevia Orange Soda 
  • 1/4 Cup of Zevia Tonic Water 
  • 2 egg yolk beaten or egg replacer

INSTRUCTIONS:

  • Heat 1 quart grapeseed oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Combine flour, dried ingredients, parsley, salt, garlic powder, and cayenne pepper in a large bowl.
  • Whisk Zevia orange soda, egg yolk l in a small bowl.
  • Dip cauliflower into egg batter then dried ingredients until fully coated
  • Deep fry small batches of battered cauliflower in the hot oil until golden brown, 3 to 5 minutes. Drain on a paper towel-lined oven-proof plate. Keep warm in the preheated oven.

SUMMER DETOX TACOS: 

  • Walnuts (Food Processed)
  • Cumin 
  • Coriander 
  • Neocell Super Collagen
  • Gluten Free Tamari 
  • Cayenne Pepper & Garlic Powder 
  • Hemp Seeds 
  • Fresh Salsa 
  • Guacamole 
  • Radicchio leaves as my Taco Shell

SUMMER NEOCELL COLLAGEN SMOOTHIE

  • 2 Cups Coconut Water 
  • 1 Tablespoon of
  • 1/2 Cup of Fresh Organic Strawberries 
  • 1 Kiwi (Peeled)
  • 1/2 Lemon Juice
  • 3/4 Cup of Blueberries 
  • 1 Tsp of Chia Seeds

Sriracha Tuna Tartare

Sriracha Tuna Tartare Served on Brown Rice Crisps :) These Make the Perfect Summer Appetizer <3 You can also substitute Tuna with Grapefruit if you Like! 

INGREDIENTS: 

  • 8 oz Sushi Grade Ahi Tuna (Finely Chopped) or Substitute Pink Grapefruit

  • 2 tsps Toasted Sesame Oil

  • 2 tsp Fresh Lime Juice or Rice Wine Vinegar (Optional)

  • 1 Persian Cucumber Diced 

  • 1 tsp Sriracha Mayo (Dairy Free) I used Hampton Creek

  • 2 tbsp Green Onions & Cilantro, chopped

  • 1 ripe, Ripe Hass Avocado, Cubed

  • 1 tsp Black Sesame Seeds

  • Pinch of Pink Himalayan Sea Salt and Cayenne Pepper

  • Served on Brown Rice Crisps Topped with Pickled Ginger (Optional)

INSTRUCTIONS:

Combine sesame oil, rice wine, lime juice, soy sauce and Sriracha Maya. Pour over tuna and mix. Add green onions and gently combine tuna with diced avocado, refrigerate until ready to serve on brown rice crisps, top with pickled ginger and sesame seeds.

Japanese Sushi Handrolls

Temperatures are getting warmers, so our bodies will naturally gravitate towards hydrating foods. Here is my Japanese Sushi Handroll recipes with a Carrot Sesame Ginger Sauce! 

INGREDIENTS:

  • 1 cup (180g) cauliflower sushi rice
  • 3 TBS sushi seasoning
  • 10 sheets toasted sushi nori (seaweed)
  • 1/2 choice of mushrooms
  • 1 medium red bell pepper
  • 6 oz (170g) preserved daikon
  • 2 medium cucumber sliced
  • 2 small avocados, pitted and sliced
  • furikake for topping (optional)

INSTRUCTIONS:

  1. Prep cauliflower rice or use quinoa or brown rice.
  2. Cut the nori sheets in half. Place one half of the nori sheet on a board, shiny side down. Spoon some rice onto the nori (about 2 to 3 tablespoons). Spread the rice so that you fill one half of the nori. Top the nori with a few slices of cucumber, red pepper, daikon, and veggies. 
  3. Starting with the lower right-hand corner, roll the nori towards the left, until you reach the end. Seal the hand roll with a few grains of rice. Repeat with all the other nori sheets.
  4. ENJOY

CARROT GINGER SESAME DRESSING:

 

  • 1/2 cup of pickeled ginger
  • 1 teaspoon of maple syrup
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons low-sodium soy sauce
  • 2 teaspoons sesame oil
  • Kosher salt & cayenne pepper optional

My 3 Ingredient Chocolate Banana Protein Pancakes:)  Gluten Free Organic and Sugar Free! YUMMMY Sweetened with only bananas & stevia. Great as a Post-Workout snack! 

MAKES 2-3 Small Pancakes

INGREDIENTS:

  • 1 Banana
  • 2 Scoops of Your Choice of Chocolate Protein Powder
  • 2 Tablespoon of Water

INSTRUCTIONS:
Mash up and stir until nicely combined
Medium heat, add choice of oil, on non stick pan
cook on each side until golden, add tahini (optional) cacao nibs, and coconut

Super Light Scrumptious Sri Lanka Inspired Cauliflower Curry "RICE"! Low Carb, High in Fiber, and Vitamin C! Quick & Easy :)

INGREDIENTS:
1 medium head cauliflower
1 cup fresh organic edamame or green peas
handful of chopped parsley or cilantro
½ cup shredded carrots
2 fresh lemon juice
2 teaspoons curry powder
2 teaspoons coconut nectar or maple syrup
1 teaspoon grated fresh ginger OPTIONAL
3/4 Cup pine nuts
Fresh  Pepper
drizzle cold pressed olive oil
flax crackers or favorite crackers to serve with!

INSTRUCTION:
1. Cut the cauliflower florets from the stem. Pulse in food processor until the cauliflower is the size of pieces of rice.
2. Stir in peas, carrots, parsley/cilantro, season & ENJOY!

The weather is getting warmer, and strawberries are now available everywhere! This recipes is SUPER YUMMY and delicious. Perfect for SUMMER get togethers, the best about this recipe is that it has no SUGAR added! ENJOY

INGREDIENTS:

  • 1 Cup Frozen Strawberries
  • 1 Cup Coconut Milk
  • 3-4 Tablespoon Coconut Butter
  • 2 Ripe Bananas
  • ¾ Cup Fresh Cut Strawberries

INSTRUCTIONS:

  1. Blend everything except fresh cut strawberries.
  2. Fill popsicle maker with mixture then added fresh cut strawberries
  3. Freeze for 5-6 hour until firm, and ENJOY! :D

Coconut Cream Pie

Everyone LOVES a YUMMY pie once in awhile! Here is my Coconut Cream Pie perfect for the festive weekend! :) 

INGREDIENTS:

  • CRUST:
  • 1 heaping cup walnuts
  • 1 Tsp of Neocell Super Collagen 
  • 1 Scoop Amazing Grass Protein Super Food Vanilla
  • 1 heaping cup pitted dates (soaked for 10 minutes in warm water and drained)
  • FILLING:
  • 1.25 cups cashews soaked for at least 4 hours or overnight, then drained
  • 3.5 Tbsp coconut oil, melted
  • 1/4 cup maple syrup or coconut nectar
  • 1 medium just ripe banana (~ 1/2 cup mashed)*
  • 1/3 cup full fat coconut milk (I scrape the cream off the top for luxurious texture)
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 2-3 Tbsp lemon juice

INSTRUCTIONS:

  1. Place soaked dates in the food processor and process until small bits remain and/or it forms into a ball. Remove and set aside.
  2. Process walnuts until a meal consistency is achieved. Add back in dates and a pinch of salt and mix to combine. When squeezed between two fingers, the crust should stick together and feel moldable. If too dry, add another date or two. If too wet, add a little almond or walnut meal.
  3. Press into a springform pan, or an 8x8 baking dish or round cake pan lined with plastic wrap or parchment. Press until flat, going up the sides about 1/2 inch. Place in freezer to set.
  4. Add all filling ingredients to a blender and blend until smooth and creamy - about 1-2 minutes. If it's having trouble blending, add a little more agave or water to encourage it along. It should be silky smooth when completely combined.
  5. Taste and adjust seasonings as needed. I think adding a heaping spoonful of peanut butter at this point would be a brilliant idea. Then pour into crust and smooth with a spoon. Tap to release any air bubbles, then cover and freeze until set - about 4-6 hours.
  6. To serve, let thaw for 5 minutes. Should keep in the freezer, covered, for at least 1 week.

INSTRUCTIONS:

  • 1 Young Coconut (Meat)
  • 5 limes, (Juice)
  • 1 cup cucumber, diced
  • 1/2 cup white onion, diced
  • 1 Roma tomato, diced
  • 1 tablespoon cilantro, minced
  • pink himalayan sea salt
  • 1/2 avocado
  • 2 tsp coconut bacon 
  • 1 tsp of hemp seeds 
  • handful of cilantro

INSTRUCTIONS:

  1. Drain your coconut. Scrap out meat (or buy from can if easier)
  2. Prep veggies, mix all together
  3. Cover with foil and let sit in the fridge for about 30 minutes. (Marinate)
  4. Use favorite tortilla, serve with baked beans and top with coconut yogurt. ENJOY
