I love having tea, but I also love smoothies in the morning. I figured out a way to get both nutrition in my morning smoothie! Green Tea Smoothie! I made this batch with my Teaforia Green Gen Maicha Tea, if you don't know what Gen Maicha is you are missing out. Traditionally brewed in Japan with roasted brown rice, this brings rich bold flavors and smokiness to your smoothie blend. Absolutely must try!

INGREDIENTS:

  • 1 Cup of Teforia Genmaicha Tea
  • 1 Cups of Almond Milk Unsweetened
  • Handful of Spinach
  • 1/4 Cup Cucumber
  • 1 Banana 
  • 1/2 Tablespoon of Chia Seeds
  • 1/2 Cup of Frozen Mangos 
  • 1 Tsp of Turmeric Powder

INSTRUCTIONS:

Blend & GLOW!

Collagen Coconut Bites

INGREDIENTS: ( Makes 5-7 Small Bites)

STEP 1 COMBINE DRIED INGREDIENTS:
1/2 Cup Almond Flour, 1 Tablespoon Neocell Super Collagen Powder, Chocolate Chips
STEP 2 ADD WET INGREDIENTS:
1 Tablespoon of Coconut Oil, 1 Tsp of Coconut Nectar
STEP 3 STIR & ROLL INTO SMALL BALLS
Stir all ingredients and roll into small bite size, coat with coconut shreds
STEP 4 COAT WITH COCONUT & EAT

( Best After Refrigerated for 5 Mins)

Mom's Taiwanese Rice Noodles

Mom came to surprise me in LA for 4th of July weekend! I was so happy to see her, of course we filmed a recipe video together in the kitchen because you all loved her so much last time. My mom Lina decided to share a childhood favorite recipe! These are Taiwanese rice noodles with veggies. Super simple & tasty 

INGREDIENTS:

  • 2 Cups of Rice Noodles
  • 1/8 Cup of Zucchini Julienned
  • 1/8 Cup of Sweet Potato or Carrots
  • 1/8 Cup of Onions Diced
  • 1 Clove of Garlic
  • 2 Scrambled Eggs
  • 1/2 cup of Teaforia Oolong Tea
  • 1/8 Cup of Asian Mushroom Julienned
  • 2 Tablespoon of Reduced Soy Sauce 
  • 3 Tablespoon of Black Vinegar
  • 1 Tablespoon of Coconut Oil 
  • 1 Tablespoon of Chili Oil with Pickled Radish Optional
  • 1 Tsp of Black Pepper 

INSTRUCTIONS:

  1. First cook rice noodles in hot water for 7 mins and drain and cool on side
  2. Cook scramble eggs and leave on side to cool, and julienne. 
  3. Soak dried mushrooms in warm water until soft 
  4. Add coconut oil on high heat, put in onions and garlic, then add in mushrooms, potato, zucchini, add in rest of sauces and pepper. Stir in rice noodles, and add in mushroom broth. 
  5. Plate, top off with eggs, and add favorite toppings such as sesame seeds, or green onions.
  6. ENJOY!

Juicero Pulp Burgers

I am a big advocate of juicing! I believe the health benefits to adding juice to our daily routine. If you don't like the mess of juicing check out Juicero!  Here is my juice pulp burger recipe I came up with, I wanted to find a way to turn all these delicious pulp into recipes. As you know juicing can get costly, but the juice pulp are filled with fiber and minerals. Here is a delicious recipe you can try out!

Ingredients (8-10 burgers)

  • Juicero Root Renewal Pulp
  • 1 cup cooked lentils
  • 1 onion
  • 3 garlic cloves
  • 1/2 cup almond meal
  • 1/4 cup flaxseed
  • 1/4 cup basil
  • 1 1/2 cups diced mushrooms (any variety)
  • 1 Tbs. liquid aminos or coconut aminos
  • 1 Tbs. olive oil
  • salt and pepper to taste
  • 1 tsp italian season

INSTRUCTIONS:

  1. Preheat oven to 375 degrees.
  2. Add cooked lentils, In a food processor, combine the almonds and flax seeds and pulse until the mixture forms a texture of breadcrumbs.
  3. Roughly chop the onions and squeeze the garlic in a press. Add both to the sunflower crumb mixture along with cilantro and pulse until incorporated.
  4. Add the mushrooms and pulse a few more times.
  5. In a large mixing bowl combine the mixture from the food processor and add the beet and carrot pulp, liquid aminos, olive oil, cooked lentils and salt and pepper to your taste. *Since your mixture is all cooked veggies, give it a try and adjust for seasoning.
  6. Shape each patty into a small ball and the squeeze down.

Avocado Matcha Truffles

Avocado are the perfect healthy fat! Not only are they good in salads, I love using avocados in DESSERTS! I make a kick ass avocado ice cream, and chocolate pudding! Today I create these YUMMY avocado coconut matcha truffles 

INGREDIENTS:
For the truffles:

  •  2½ cups shredded coconut, unsweetened
  •  2 Tbsp coconut oil, melted
  •  ¼ cup maple syrup
  •  ¼ cup avocado, mashed

For the chocolate coating:

  • ½ cup melted coconut oil
  • 3/4 cup raw cacao powder
  • 1/4 cup maple syrup

INSTRUCTIONS:
1. Mix the shredded coconut, maple, coconut oil, and avocado.
2. Form the mixture into small balls by squeezing until a ball forms.
3. Once you have the balls rolled, freeze for 1 hour or so until they are firm. 
4. For the chocolate coating, whisk the ingredients together in a bowl until smooth.
5. Remove the truffles from the freezer and insert a skewer through the middle (don't poke through them). 6. One by one dip them into the chocolate coating and place in the fridge to set. 
7. Dust with matcha powder (optional)

  • 1 cup of your favorite red wine
  • Juice of 1 orange 
  • Juice of 1 lime & zest 
  • 2 cup of ice

FOR THE MARGARITA SWIRL

  • 1 can frozen lime concentrate
  • 2 shots tequila
  • 2 cup of ice

INGREDIENTS:

  • Grapeseed oil or Coconut Oil
  • 12 Gluten Free Corn Tortillas
  • Pink Himalayan Salt
  • Refried beans (1 Box BPA free)
  • 1/2 head iceberg lettuce, sliced thin and seasoned with salt and lime juice (no oil)
  • 2 medium tomatoes, chopped
  • Add handful of spinach for extra color and greens
  • 1-2 chopped peeled and pitted avocados or guacamole
  • 8 ounces grated favorite cheese or dairy free option
  • 1 cup of mango salsa 
  • Top with 1 sunny side egg per tostada
  • A handful of chopped fresh cilantro

The things I would tell my 12 year old self.  Don't give up, everything will work out in divine timing. No need to rush, keep putting in perfect effort. The bullying will stop and you will change the world. The universe has your back, keep being kind regardless of how much suffering you have endured. Count your blessings, work hard and you will be rewarded. There are things in life that are unfair, but don't be a victim you are powerful beyond measure. This too shall pass, focus on the baby steps, and soon change will happen. Stick close to those who love you for who you are. Not everyone will understand and support you but that's none of your business. Embrace the unknown, keep meditating and help others as much as possible. Love more, laugh more, and enjoy the present. Invest in yourself. This day will never be brought back again, live life fully with passion and with no shame. I Love You

Dragonfruit Coconut Ceviche

Served my Zuma Valley Coconut Ceviche last night and everyone went nuts!!! We ran out so quickly!! thank you for everyone who came to support Wellness In The Schools Charity Gala. I got to meet some of my favorite chefs, and so grateful to be able to help our future generation!

Ingredients

  • 2 cups Zuma Valley Tender Young Coconut Meat (thawed)
  • 1/2 red bell pepper
  • 1/2 heirloom tomato
  • 1/2 cup salsa (optional)
  • 1/2 jalapeño
  • 1/2 cup cilantro
  • 3 limes
  • 1 tsp of cumin 
  • 1 tablespoon of liquid aminos
  • 1 tsp of coriander 
  • 1/4 tsp pink sea salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1 bag Tortilla chips
  • 1 tablespoon of black sesame seeds
  • top with sprouts and sriracha mayo dairy free

Instructions

  1. Thaw Zuma Valley Tender Young Coconut Meat.
  2. Dice 2 cups of coconut meat and add to a large bowl.
  3. Finely dice bell pepper, tomato, cilantro, and jalapeño (add the seeds if like it spicy!) - Add to the coconut in the bowl and add the salsa. If you do not have salsa on hand, feel free to add more tomato!
  4. Squeeze limes over the ceviche mixture, add salt, pepper, and chili powder.
  5. Let sit for about 30 minutes to allow all the flavors to blend together.
  6. Serve with tortilla chips and enjoy!

Notes

  1. Another great addition to this recipe would be a finely diced cucumber! Make sure to skin the cucumber before chopping to add some additional crunch to this recipe.

  This is a perfect light, refreshing snack to have during a busy day! Super easy and delicious!

INGREDIENTS:

  • 2 Gluten Free Bread Cut Into Four Slices

  • 1/2 Cup Your Favorite Marinara Sauce

  • 1/2 Cup Fresh Salad Mix (Carrots, Romaine)

  • 3/4 Cup Cucumber

  • 3/4 Cup Cherry Tomatos

  • 3/4 Cup Organic Non-Gmo Corn

  • 2 Tablespoon of Olive Oil

  • Handful of Favorite Nuts to Top at End ( I use Hazelnuts)

  • 1 Tablespoon of Red Wine Vinegrette

INSTRUCTIONS:

  1. Cut bread into four slices

  2. Spread Marinara Sauce On Bread Evenly

  3. Mix Spring Salad Mix with Cut Cucumbers and Tomato & Season with Olive Oil, Vinegrette Salt and Pepper! Top onto bread sprinkle corn and extra marinara sauce.

  4. Enjoy cold or warm with oven at 275 for 5 mins

This week we visit Chef Makani at PonoBurger. Chef shares with me that "PONO" means to do things with LOVE and INTEGRITY. Chef Makani brings a Japanese and Hawaiian flair to her signature dishes such as the Ginger Ahi Poke, and infamous Chicken Sandwhich. Mekani share with me that a great dish always starts with quality ingredients, she sources LOCAL and knows all her farmers by first name. "It is important for us know to know where our food is coming from". When Chef Makani is not rocking it in the kitchen, she is swimming with dolphins, and foraging vegetables from her home garden. Pono Burger has locations in Santa Monica, Venice, and West Hollywood. For all you vegetarians don't fright, Chef Makani also has a collard wrap made with sweet potatoes that is to die for. I highly recommend Pono Burger, the food was fresh, great ambiance, and always GOOD VIBES.

This week's episode of #KitchenHustle was our first ever KIDS EDITION! I was joined by the amazingly talented Jameson and Bella who shared their favorite lunch recipes. Don't let their age fool you, these kids mean business! No ham sandwiches and chicken tenders here. Jameson is a huge fan of burritos and shared a super easy and PROTEIN PACKED avocado tuna wrap. Bella who loves shrimp shows us how to make her REFRESHING shrimp and cucumber salad. They may be young but there is so much we can learn from them! Check out their recipes below!

JAMESON'S AVOCADO TUNA WRAP

INGREDIENTS:

  • Tuna
  • 1 Avocado, pitted and peeled
  • Salt and Pepper
  • Lemon Juice
  • Cucumbers, chopped
  • Celery, chopped
  • Wrap of Your Choice
  • Spinach (optional)

INSTRUCTIONS:

In a bowl, mix all ingredients together. Spread on wrap. Roll and enjoy!

BELLA'S SHRIMP AND CUCUMBER SALAD

INGREDIENTS:

  • Shrimps, deveined
  • Coconut Oil
  • Soy Sauce
  • Curry Powder
  • Salt & Pepper
  • Garlic, minced
  • Dill leaves
  • Sunflower Seed Oil
  • Cucumber, diced
  • Tomatoes, chopped
  • Lemon

INSTRUCTIONS:

In a pan with sunflower seed oil, saute shrimp until done. Set aside. In a bowl, mix cucumbers, tomatoes, shrimp, and lemon juice. Top generously with dill leaves.  Enjoy!

WoHOOO Today is NATIONAL PANCAKE DAY! I'm not sure who created this day, but we are not complaining! I grew up eating pancakes, and always reminds me of HAPPY TIMES. Here is my chocolate coconut paleo pancakes that I know you will just LOVE. ENJOY

Ingredients

  • 1/2 cup of almond meal
  • 1/2 cup coconut flour
  • 1 cup of coconut fat (full fat)
  • 1/2 cup of almond milk
  • 2 large eggs
  • 1/2 teaspoon pure vanilla extract
  • pinch of cinnamon powder
  • 1 Tablespoon raw cacao powder
  • 1/4 teaspoon pink himalayan sea salt
  • 1/2 teaspoon of baking soda
  • 1 Tablespoon of Dairy Free Chocolate Chips ( optional)
  • 1 Tablespoon of coconut oil to grease the pan
  • 2 Tsp of date crystals or coconut sugar (optional)

Instructions

  1. Place all the ingredients in a blender and mix until smooth.

  2. Place 1/2 teaspoon of coconut oil in the pan to grease the pan.

  3. Use a spoon to help pour out a 4" round. Shake the pan lightly to thin the batter in the pan.

  4. Cook on one side for roughly 3 - 4 minutes and flip when the edges turn dark brown.

  5. Top with Fruit & Coconut Yogurt & Enjoy.
